Hep Cahill’s recipe for ‘Boil Up’, a traditional New Zealand soup.
Ingredients: Meaty pork bones Potatoes Sweet Potato Pumpkin Water Water Cress Salt Method: Place meat in a pot large enough to accommodate all ingredients and fill with enough water so everything is submerged.
Bring to the boil, then turn down to simmer and cook until meat is tender and falling off the bone (roughly one hour).
Then add sweet potato and potato. With approximately 20 minutes left, add pumpkin and watercress and season to taste.
Serve when ready in a big bowl and tuck in!
